NQ4U is built by two people who love North Queensland in completely different — but perfectly compatible — ways.
Allie sees the region through a storyteller’s lens: the colours, the characters, the coastlines, the outback, the culture. She’s the branding brain and the organiser who keeps the wheels turning, the voice shouting from the rooftops about why this place is world‑class, and the one making sure every detail reflects the spirit of the North.
Adam sees it through flavour, discipline, and standards. He’s the chef who refuses shortcuts, the one who builds systems that hold up under pressure, and the person who makes sure the food isn’t just good — it’s consistent, accountable, and done properly every single time.
Together, they’ve created NQ4U: a food trailer that’s part tourism campaign, part culinary discipline, part love letter to the region they call home. One brings the heart, the hype, and the hospitality; the other brings the technique, the structure, and the no‑nonsense execution.

About Chef Adam Fitzgerald
I’m a Chef first. Co‑Owner and Culinary Director of NQ4U second.
NQ4U exists because I wanted to build something that cooks proper food, consistently, without excuses. No overthinking, no shortcuts, no hiding behind trends. Just food that’s done right, every time, by people who care about what’s going on the plate.
At NQ4U, I’m responsible for the food—menus, standards, systems, and execution. I’m hands‑on with what we make and how we cook it. The focus is simple: strong flavours, solid technique, seasonal produce, and kitchen systems that work under pressure. If it doesn’t earn its place, it doesn’t go on the menu.
My time as Executive Chef for the Townsville Brewing Co./Markina Enterprise Group is what gave me the foundation—and the confidence—to conceive NQ4U. Running the kitchens at Townsville Brewery, Restaurant 1889, The Banquet Centre, and the Magnetic Island venues (Marlin Bar and Picnic Bay Hotel) meant operating at scale: à la carte dining, large‑format events, and food‑and‑drink pairings built to complement the beer and wine, not compete with them. High volume, high expectations, no room for error. I’m proud of what we achieved together.
Before that, I was Head Chef at The Watermark Townsville—a busy, high‑turnover venue where consistency mattered more than ego. Breakfast through to dinner, functions on top, seven days a week. It taught me that good food only matters if you can deliver it reliably, not just when conditions are perfect.
I also cut my teeth in venues across Melbourne, finishing as Head Chef at the Terminus Hotel in North Fitzroy. That time shaped my discipline, sharpened my standards, and reinforced the importance of food that’s straightforward, well executed, and doesn’t need explaining.
NQ4U pulls all of that together. It’s food built on experience, repetition, and accountability. As Co‑Owner and Culinary Director, my job is to back the food, back the team, and make sure we do it properly—every service, every plate, no bullshit.

I’m the co‑founder of NQ4U – the branding brain, flavour‑obsessed organiser, and unapologetic North Queensland hype‑woman behind the business’s unmistakable tropical spirit. My career has spanned multiple sectors — including venue management, logistics, sales, and customer experience — and I bring the kind of operational know‑how that helps keep NQ4U running smoother than a glassy morning on the Coral Sea.
I’ve built my career everywhere from working with local businesses across multiple industries, to working in iconic venues that define North Queensland’s hospitality scene — giving me a deep, lived‑in understanding of what makes this region tick. I’ve even spent time behind the wheel of a HR truck, delivering across Townsville and throughout the region’s most jaw‑dropping coastlines, rainforest backroads, outback highways, and tiny towns with big personalities. If North Queensland were a map, I’ve coloured in every corner — from the lush tropics to the red‑dust outback.
I’m a passionate lifelong traveller and former travel agent who has explored the world, lived abroad, and collected fridge magnets like trophies — but nothing compares to North Queensland. The reef, the rainforest, the islands, the outback, the wildlife, the people… this place doesn’t just look good in photos; it gets under your skin in the best possible way. It’s the kind of region that feels like home even to those just passing through.
NQ4U is my rolling tourism campaign: part food trailer, part love letter to the tropics, part “you HAVE to come here”. Through NQ4U, I’m on a mission to serve flavours that tell the story of the region — bold, colourful, sun‑kissed, and proudly local. Every dish is an invitation for visitors to fall head‑over‑heels for North Queensland, and a reminder to locals that we don’t just live somewhere beautiful — we live somewhere world‑class, unforgettable, and absolutely bragworthy.
